His wife and chef at Jardins Sauvages, Nancy Hinton, serves it in every way imaginable: coulis, sauce, pasta, salad, baked, in sandwiches, and more. Its beautiful flesh, just firm enough and juicy, contains very few seeds. Its moderate acidity is also very pleasant. The good-sized fruits, more or less conical, measure about 7-8 cm long and form clusters of 5 to 10 tomatoes. Each takes on an elongated shape, wider at the shoulders, halfway between two Italian varieties: the San Marzano and the beefsteak. The plant, with moderate growth, reaches 1.2-1.5 m in height in one season in Quebec. Harvesting normally begins around the end of August. For field-grown plants, it is recommended to pick them without delay when they turn red, as they become more fragile as they ripen.
