Also known as miniature watermelon, gherkin, mouse melon, zehneria, and cucamelon, this curious vegetable produces edible fruits that are harvested when they are between 2 and 4 cm long. They can be eaten fresh or pickled like gherkins. Russians are particularly fond of these pickled vegetables, which they enjoy with cold cuts. Their pale and dark green marbled skin resembles that of watermelons.
Native to Central America, the Mexican cucumber is easy to grow and can be trellised on a support or wire mesh, where it attaches itself with tendrils. One plant can cover nearly two square meters and produce between 10 and 15 fruits. Allow one month between sowing and transplanting outdoors once the risk of frost has passed.
