This very hardy plant grows 20 to 30 cm tall and thrives in fertile, cool soil. It is harvested by cutting the leaves at ground level as needed. The raw, tender, and mild young leaves can be combined with other types of leaves to prepare exquisite salads. Arugula is an ingredient in mesclun. Cooked leaves enhance sauces and soups. After lightly sautéing them in olive oil, Italians use them to garnish pasta dishes.
